“Top Chef Mexico” will be launching on February 18th on NBC UNIVERSO. We got to interview one of the judges, Chef Guillermo Beristain! Chef Guillermo Beristain has had a very successful career. He is originally from California but spent time working in Europe, where he worked in several Michelin star restaurants. In 1998 he opened, Restaurant Pangea which was listed No. 19 on the “Latin America ́s 50 Best Restaurants” by S. Pellegrino &Acqua Panna.

upfrontNY: What has been the best part of being a part of “Top Chef Mexico”?
Chef Guillermo Beristain: Una de ellas ha sido constatar el gran nivel que vive el día de hoy la cocina mexicana, con esta generación de cocineros talentosos, apasionados y con un gran oficio. También el convivir con los 3 jueces y Ana Claudia ha sido un gran privilegio.
-One of them has been to confirm today’s top-notch Mexican cuisine, with this generation of talented and passionate chefs. It has also been a great privilege to live with three judges and Ana Claudia.
upfrontNY: The show will be launching soon, what are you most looking forward to with the premiere?
Chef Guillermo Beristain: Ver el primer episodio terminado, fue un día larguísimo y quiero ver como resumieron tantas horas y emociones en una hora treinta
–I’m looking forward to seeing the first episode. It was a long day, and I want to see how they packaged so many hours and emotions into an hour and a half.
upfrontNY: Did you always know you wanted to be a chef?
Chef Guillermo Beristain: Casi siempre, desde que tenía 17 años.
-Almost always, since I was 17 years old.
upfrontNY: Was there a specific meal that inspired your journey as a chef?
Chef Guillermo Beristain: El tener el privilegio de crecer en una ciudad pesquera como Ensenada, Baja California y desde pequeño sentir un gusto por los pescados y mariscos.
-Having the privilege of growing up in a fishing town like Ensenada, South California and since I was little enjoying the taste of seafood.
upfrontNY: What has been one of the highlights of your career?
Chef Guillermo Beristain: El que Pangea esté en la lista de los mejores restaurantes en Latino América sin duda es una de ellas y el ser parte de “Top Chef México”, un programa al que admiro y respeto .
-Having Pangea on the list of the best restaurants in Latin America has definitely been one of them, and also being part of “Top Chef Mexico” which is a show that I’ve always admired and respected.
upfrontNY: When visiting New York City, what do you love most?
Chef Guillermo Beristain: La intensidad y lo vibrante que es su ciudad, es una ciudad que te reta además de que su gente, la comida, la moda, el arte, son únicas.
-The intensity and the vibrant atmosphere of the city. It is a city that motivates you, plus its people, food, fashion, and art are unique.
